Tortilla de Patatas

500g (1lb) all-purpose potatoes, peeled and cut thin into 1cm slices
10 ml (½ cup) olive oil
1 large brown onion roughly chopped
12 eggs

Such a simple but delicious dish! The tortilla is the dish by which to judge a tapas bar.

Directions

Heat the oil in a deep-sided non-stick frying pan over medium heat. Add the potatoes previously cut and the onions. Cook until the potatoes soften. Season as needed.

Whisk the eggs with 1 teaspoon of salt and drain the potatoes and onions and add them to the bowl with the eggs. Mix well and cook over low-medium heat for 20 minutes, or until the eggs are just set. Slide onto a serving plate and enjoy!
