Patatas Bravas

750g (1lb) all-purpose potatoes, peeled
650 ml (2 fl oz/ ¼cup) olive oil
allioli (see recipe)

A delicious dish that can be found in tapas bars throughout Spain!

Directions

Preheat the oven to 200 C (400 F/ Gas 6).Cut the potatoes into 4 cm (1 ½ in) cubes and put on a baking tray with the olive oil. Mix to coat and season well. Cook in the oven for 45 minutes, or until golden. Shake the baking tray occasionally so the potatoes bake evenly on all sides.

Season the potatoes and serve with the allioli dolloped over the top or served on the side for dipping.
