Garlic Mushrooms (Champinones al Ajillo)

6 garlic cloves
1 ½ tablespoon of lemon juice
650g (1lb or 7oz) mushrooms sliced
60ml or ¼ cup olive oil
2 teaspoons chopped flat-leaf parsley

Garlic in Spain is used in a big variety of dishes. This tasty but simple dish of garlic and mushrooms appears on menus at cafés and bars right across the country.

Directions

Crush four of the garlic cloves and thinly slice the rest. Sprinkle the lemon juice all over the sliced mushrooms.

Heat the oil in a large frying pan and add the crushed garlic. Stir over medium-high heat for 10 seconds, then add the mushrooms. Season and cook, stirring often for 8-10 minutes or until the mushrooms are tender. Stir in the sliced garlic and chopped parsley and cook for another minute.

Serve hot and enjoy!
